What permits do I need to open a restaurant?

The one that closes you is the one nobody put on the schedule. Health, fire, building, and licensing each run their own review at their own office, on calendars that do not line up, and the sequence that works in one county is the wrong sequence in the next. Call with the address and the concept, and the whole track comes back on that call.

How early do we need to start the liquor license?

Before the build-out, not after. Board calendars run on their own meeting cycle, and a missed docket does not cost you a week, it costs you until the next meeting. We run the license track beside the building track so the doors and the pour open together.

Can I open before the certificate of occupancy?

No. The occupancy approval is what allows the public through the door, and it sits behind the fire and health sign-offs. A soft opening without it is how a first week becomes a shutdown.
